Quick Fix Bento Box

When in doubt, I make omuraisu. Well, my version of omuraisu is a sort of "clean up" meal where I pull all the oddball items from the freezer and fridge, toss in a pan then place in a two egg omelet.

I have some cold rice that will never see the inside of an onigiri mold, check. A thumb sized piece of yellow carrot, check. half a bell pepper, check. Green onions, chunk of tofu, yesterday's "wheat meat", check, check, check. A cup of roasted kabocha? No way, that immediately goes into my mouth. Yum. The rest of the recipe is just as simple. Heat up the items with some minced garlic, sesame oil and ketchup. Yes, ketchup. I add the entire odd combo to the center of an omelet (omelette?) which has been seasoned with mirin and a touch of salt and soy sauce. Fold it over and let cool completely before placing in the box.

The other pieces of the bento box is also a hodgepodge of items: last piece of corn pudding, handful of greenbeans, the last of the strawberries and a lonely kiwi berry. I always have frozen edamame to fill in the gaps and here again, it does the job.

You don't have to wait for leftovers to make your own omuraisu, it's a delicious meal that stands on it's own with a myriad of online recipes to choose from. But if you were to whip one up now, what kind of filler ingredients do you have ready?

Bento Box Item: Green Tea Jellies

Do you ever purchase those frozen, ready made shumai? I do on occasion and whenever I open the package I stare at the plastic holder/divider thing that seperates each shumai. I know it sounds obsessive, but it's a really nifty piece of plastic and I just can't throw it into the recycle bin without somehow repurposing it. So I stashed one of them in my official box of potential essential bento tools (EBT) which, of course is next to the "pile of many Daiso gadgets". Until today!!! While mixing up a batch of green tea jellies, I decided to set them in molds instead of pouring into a shallow pan for future cubing. The former shumai plastic tray is now a jelly mold and rehomed to the official drawer of EBT.



I also used some of tops of onigiri molds and egg shapers for the jellies which worked out quite dandy. The jellies are made with kanten (agar agar) Just follow the directions on the packaging and substitute the water for whatever flavor you want. And because these jellies stay firm at room temperature, they're super for packing in you bento lunch box. What flaver do you or your kids like? The recipe is limit-less really. "No, if anyone orders Merlot, I'm leaving. I am NOT drinking any f*****g Merlot!"


That funny line from the movie "Sideways"crept into my mind when I read this hummus label. It's locally made and being sampled, (I love samples, but I digress) at the Farmer's Market yesterday. I savored a small square smeared with this purple-brown goodness and wondered, "Why would anyone have objection to Merlot"? Confession: I've never tasted Merlot. So what's the problem? Confession: I don't drink wine. All right... last confession: I don't drink any alcohol. I'm happy just to be blissfully ignorant and munch this yummy merlot flavored hummus which will be featured in tomorrow's bento box. BTW, I have no affiliation but I have to say all the hummus from Sound Bites tasted delish and I bought a couple different varieties.
